3 Yummy Summer Salads






Black Bean Salad

  • Serves 4
  • 1 cup whole-kernel corn
  • 2 cans (16 ounces each) black beans, rinsed and drained
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons minced red onions
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon lemon juice
  • 1 teaspoon minced garlic
  • 1 teaspoon honey or brown sugar
  • salt
  • ground black pepper
  • lettuce leaves

DIRECTIONS
  1. In a large bowl, combine the corn, beans, parsley, onions, vinegar, oil, lemon juice, garlic, and honey or brown sugar. Let the salad marinate for 30 minutes at room temperature. Add salt and pepper to taste.
  2. Arrange the lettuce leaves on 4 salad plates; spoon the salad over the lettuce.

Salmon Salad with Walnuts


  • 8 cups mixed baby greens, baby lettuces, or mixed Mediterranean greens
  • 1/4 cup chopped walnuts
  • 1 tablespoon olive oil
  • 1 teaspoon walnut oil
  • 2 teaspoons balsamic vinegar
  • 1/4 teaspoon sea salt
  • 3/4 pound salmon fillet
  • Ken's Lite Accents Honey Mustard salad spray

DIRECTIONS
  1. WASH and spin the greens until very dry.
  2. HEAT a large skillet over medium heat. Add the walnuts and toast for 1 minute. Remove the walnuts from the skillet and set aside.
  3. HEAT 1/2 tablespoon of the olive oil in the skillet over medium heat. Add half of the greens and cook gently for up to 1 minute. Place the greens in a medium salad bowl. Repeat with the remaining olive oil and greens. Toss the warmed greens with the walnut oil, balsamic vinegar, and salt.
  4. PLACE an oven rack approximately 8" from the broiler element. Preheat the broiler on high. Place the salmon skin side down in an ovenproof dish. Coat the fish's surface with 8 sprays salad spray. Broil until the fish is just cooked, 8 to 10 minutes, depending on thickness.
  5. CUT the fish into 4 servings and place on top of the greens.

Southwest Chicken Salad

  • Dressing
  • 1/4 cup light ranch dressing 
  • 1/4 cup mild green salsa
  • 2 tablespoons chopped fresh cilantro
  • Salad
  • 1 tablespoon chili powder
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 pound thin chicken breast slices or chicken tenders
  • 1 lime, quartered
  • 6 cups shredded romaine lettuce
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1/2 cup corn kernels
  • 1 medium tomato, chopped
  • 1/4 cup thinly sliced red onion

DIRECTIONS
  1. To make the dressing: In a small bowl, mix the ranch dressing, salsa, and cilantro until blended. Cover and refrigerate.
  2. To make the salad: Coat a barbecue grill or ridged grill pan with olive oil spray, and heat to medium-hot. In a cup, mix the chili powder, cumin, garlic powder, onion powder, salt, and pepper. Rub evenly on both sides of the chicken.
  3. Grill the chicken, turning once, for 3 to 4 minutes, or until it is no longer pink and the juices run clear. Transfer to a plate. Squeeze the lime over the cooked chicken.
  4. In a large bowl, toss the romaine with half the dressing. Divide among 4 plates.
  5. Sprinkle the beans, corn, tomato, and red onion equally over each serving and top with the grilled chicken. Serve the remaining dressing on the side.

Healthy Snack favorites from Texas Fit Chicks Trainers




Have you noticed that you are more hungry after your workout at  bootcamp? When you add in weight lifting (especially for a beginner), you will be hungry, often! Since keeping your metabolism running throughout the day is important, healthy snacking is critical to weight loss. Want to know what Texas Fit Chick Trainers are snacking on? We've combined some of our trainers' favorite healthy and quick snacks for you right here....


Greek yogurt w/ blueberries & honey
Hummus & crackers
Pirates Booty
Peanut butter & jelly on a bagel
Banana
Low Sodium Cheese Stick plus 1/2 apple. 
Reducted fat cottage cheese and sliced strawberries
Vanilla whey protein shake with 1 tsp sugar free Swisse mocha International coffee and/or 1 tsp PB2 (yum!) mixes with water and ice.
Shakeology chocolate protein shake straight up, water and ice.
Shakeology green berry protein shake with 1/4 cup frozen berries (no sugar added) mixed with water.
100 calorie pack cocoa roasted almonds with a small gala apple.
Turkey/cheese roll up with fresh organic spinach rolled in the middle and a squirt of spicy brown mustard.

sprinkled with sunflower seeds or pine nuts (about a tsp)
mix and enjoy!

1 large fresh date
1 low sodium rice cake
Top rice cake with almond butter and chopped date.
Hummus and veggies
Sliced banana and apple butter rolled up in a whole wheat tortilla
Stoneground round wheat crackers, light Laughing Cow Swiss cheese and grapes


Naan (bread) sliced in half, spread cream cheese on each slice, layer with turkey and cucumbers with a little sea salt.
Fresh Snap peas with walden farms balsamic dressing
Lite cool whip, 1 sf strawberry jello with light drizzle of hard shell heath topping. (Hard shell topping hardens and makes it sweet n' crunchy)
Green apple / almond butter
Plain greek yogurt / fresh fruit

Healthy Spinach Been Lasagna Recipe





Great recipe for a healthy twist on lasagna! The entire family loves this one.....


6 Lasagna Noodles (go for the whole wheat kind)
Cooking Spray
1 lb lean ground beef (93% fat free) or Ground Turkey
1 medium Onion, chopped
2 cloves Garlic, minced
1 1/2 cups tomato puree
1t dried whole basil
1t dried whole oregano
1/4t salt
1/4t pepper
2 (10 oz) packages frozen chopped spinich, thawed
1 (12 oz) carton low-fat cottage cheese (2%)
3 T grated Parmesan Cheese
1 egg
1/2 t salt
1/4 t pepper
1/8 t nutmeg
Cook Noodles - set aside

Coat large skillet w/ cooking spray, place over med heat till hot. Add meat, onions and garlic; saute until meat is brown and onion is tender. Drain meat mixture well in a colander, wipe pan drippings from skillet w/ paper towel. Return meat mixture to skillet. Add tomato puree, basil, oregano, 1/4 t pepper and salt; bring to a boil. Reduce heat and simmer for 5 mins. Place spinach on paper towels, and squeeze until barely moist. Combine spinach and next 6 ingrediants in a med. bowl, stirring until blended. Spread half of spinach mixture evenly in a 12x8x2 in. baking dish, layer 3 noodles over spinach. Spread 1/2 of meat mixture over noodles: repeat layers, ending with meat mixture.


Cover and bake 350 degrees for 45 mins. Let stand for 5-10 mins before serving.


Yield: 8 servings - 251 calories per serving

College Station Texas Fit Chicks Trainers At Home Workout!

Boot Camp Fat Burning Workout


Warm up-15 jumping jacks-30 seconds high knees-30 seconds booty kicks-10 arm circles forwards and backwards-2 glute stretches (pull knee up to chest and hold no more than 2 seconds) and 2 quad stretches (pull foot to bring heel up to booty-make sure to grab foot with opposite hand and hold no more than 2 seconds) on both legs-shake out anything else you might need to before getting started.

Giant Set #1:
15 burpees
15 regular push ups (to modify do push ups with knees down)
50 mountain climbers (right leg then left leg = 1)
Run the length of parking lot/living room/hallway 3 times (down and back = 1)

Giant Set #2:
15 plie squat + upright row (wide feet and toes turned out-make sure knees do not go over toes and keep back flat-squat down until booty is parallel with knees-on the way up bring the weights straight up to chin with elbows out to sides and lower down-repeat)
15 squat jumps (to modify omit the jump and raise up on toes and reach arms up to sky)
15 bench/chair/curb dips (to modify bend knees)
Run the length of parking lot/living room/hallway 2 times (down and back = 1)
--FAST WATER BREAK (less than 30 seconds)--

Giant Set #3:
30 seconds double toe touches (in a plank position step with left foot to the left of body-bring right foot over to meet it-step with right foot to right side of body and bring left foot to meet it-repeat for time)
15 bent over rows (keep back flat and squeeze shoulder blades together)
15 weighted walking lunges forwards, 15 weighted walking lunges backwards (right leg then left leg = 1)
Run the length of parking lot/living room/hallway 1 time (down and back = 1)

Giant Set #4:
1 set of 21’s (7 top ½ bicep curls 7 bottom ½ bicep curls, 7 full out bicep curls) (start w/weights at sides-keeping elbows locked at sides and tummy tight curl the weight halfway up-repeat 7-start w/weights at half-way position and curl up as high as possible w/out moving elbows from sides of body-repeat 7-start w/weights at sides and curl all the way up and back down-repeat 7)
20 squat + side leg lift (right leg then left leg = 2) (stand with feet shoulder width apart w/hands behind head-do a squat (keeping tummy tight and knees behind toes)-return to stand and lift right leg directly out to the side-lower down to start-next time lift left leg out to the side-alternate for 20 reps)
1 minute curb run (level 3 (hardest)-both feet at the same time jump up to top of curb and down; level 2-right foot up on curb and left foot on the ground-jump and switch to have left foot on curb and right foot on ground-alternate for time; level 1-step up right foot then left and step down right foot then left-alternate sides for time)-you choose which level you want to do but push yourself!
--FAST WATER BREAK (less than 30 seconds)--

Repeat Giant Sets 1-4 for three total rounds before doing Tabatas!

TABATA #1: Strength
1-First 20 seconds-weighted reverse lunges (keep tummy tight and make sure front knee does not go past toes)-Rest 10 seconds
2-Second 20 seconds-squat + shoulder press (stand with feet shoulder-width-apart w/weights at shoulder height-do a squat and on the way up press weights straight up to the sky and bring weights down to shoulder height as you do the next squat)-Rest 10 seconds
Alternate 1 and 2 for 8 rounds
--FAST WATER BREAK (less than 30 seconds)--

TABATA #2: Cardio + Abs
1-First 20 seconds-jumping jacks or high knees or butt kicks-Rest 10 seconds
2-Second 20 seconds-bicycle crunches-Rest 10 seconds
Alternate 1 and 2 for 8 rounds

Booty Burner:
15 fire hydrants on right leg-15 fire hydrants on left leg (Repeat on both legs)

Cool down for at least 5 minutes more if you’re feeling super tight and tired.

Keep your Holidays Healthy with Texas Fit Chicks



Keep your holiday healthy with these recipes!

Pumpkin Fluff:



Mix canned pumpkin with Zero fat Cool Whip and a large fat free vanilla instant pudding (adjust amounts to taste) Makes Pumpkin Fluff, low cal and yummy!

Crust-less Pumpkin Pie:

15 oz can pumpkin
¾ cup Splenda®
½ cup Egg Beaters®
1½ cup nonfat milk
½ tsp salt
1 tbsp flour
2 tsp pumpkin pie spice
Beat all ingredients together. Spray pie plate with cooking spray. Pour batter into pie plate and bake for 15 minutes at 400°. Reduce heat to 350° and bake for an additional 45 minutes or until knife inserted in center comes out clean.
Top with a dollop of fat-free whipped cream (not included in nutritional information).

Pumpkin Parfaits:


1 box fat-free, sugar-free vanilla pudding mix
1¾ cup nonfat milk
15 oz canned pumpkin
1 tsp pumpkin pie spice
½ cup Splenda®
2 cups fat-free whipped topping
Mix first five ingredients together in a bowl for two minutes. Hold a long tapered glass at a slight angle. Spoon ½ cup of pumpkin pudding mixture into the bottom. Top with with 1½ tbsp fat free whipped topping . Repeat layers. Chill until ready to serve. The hardest part of this recipe is not getting the pudding on the side of the glass. Spoon slowly and carefully.

Dirty Potatoes:
6 cups diced potatoes with skin
4 tbsp fat-free cream cheese
4 tbsp fat-free half & half
1 tbsp fat-free spray butter
2 tsp crushed garlic
2 tsp garlic salt

Wash potatoes and cut into large cubes, but don't peel. Place in a large pot, cover with water and boil until tender. Drain. Beat with an electric mixer on low, or mash remaining ingredients together.

No Guilt Gravy:

2 cans 98% fat-free cream of chicken soup
6 oz fat-free chicken broth
¼ tsp Gravy Master® seasoning
½ tsp garlic powder
1 tsp poultry seasoning
½ tsp pepper
¼ cup nonfat milk
1 tbsp cornstarch
In a medium saucepan, mix cream of chicken soup, chicken broth, Gravy Master®, garlic powder, poultry seasoning and pepper. Heat and simmer for 7 minutes. In a small bowl mix together nonfat milk and cornstarch. Bring gravy mixture to a boil and gradually stir in the milk mixture. Continue to cook, stirring constantly for 1 minute or until thickened. Be careful not to let the bottom scorch.

What Texas Fit Chicks did for one husband...

What Texas Fit Chicks Has Done For Me…From One Inspired Husband

Every day I’m truly thankful to be married such an amazing woman. I’m also very thankful that she found Texas Fit Chicks a couple of years ago. My wife is Danyelle Becker and she’s the trainer for the East Plano Los Rios TFC location. Her journey to get to this point started many years ago. My wife and I met in high school and have been together ever since. We got married several years later and had twin boys over 5 years ago. We’ve been together for nearly 17 years (married 12 of those). Needless to say, we’ve been through a lot together.

Over the years, she started to gain weight and began to slowly lose self-confidence. This naturally put an underlying strain on our relationship. It was something very difficult to discuss, and painful to think about and live with for so long. She tried all sort of things to lose weight, but nothing worked. This pattern went on for over 10 years. Everything changed when Danyelle met Leigh Ann Gilbert and was introduced to Texas Fit Chicks. 

Leigh Ann is an amazing trainer who teaches at the McKinney Crosspoint Texas Fit Chicks location. They met around 3 years ago through our kids school. I am so thankful they did since our lives were forever changed once they connected. For those that don’t know Leigh Ann, she is the epitome of what a great trainer should be…someone who can motivate you, hold you accountable, and really kick your butt into shape! After a few months of subtle convincing Leigh Ann got Danyelle to try out a TFC class. 

She liked the first class and stuck with it. It was slow going for a few months until ‘the moment’ happened. One day in late 2011, Danyelle was talking with Leigh Ann and getting down on herself about not seeing the results she wanted. Leigh Ann says to her ‘What can you do to change? No more excuses.’ For whatever reason, those words really changed something in Danyelle’s head. She suddenly realized that if she wanted to change, she was the only person that could do it. Texas Fit Chicks and Leigh Ann provided the opportunity for change, but it was up to her to work it. To me, this aha moment was like a spark. Every person has this energy inside of them. All that’s needed sometimes is for someone to give you that spark to ignite it. 

I view Leigh Ann and Texas Fit Chicks as the spark that got into Danyelle’s head. After that moment, everything changed for the better. She began to eat better, work out harder, feel better, look better, smile more…you name it. She got so into the TFC program and lifestyle that she became a trainer herself. She took the steps to accomplish her goals and now her business is really starting to grow. It’s amazing to see the number of chicks Danyelle has inspired herself. I know of one boot camper turned trainer Danni (Melissa location) who started Texas Fit Chicks after seeing Danyelle’s before and after photo and reading her success story. During the course of all of this, Danyelle has lost nearly 70 pounds, has become a certified trainer and is building a thriving TFC business. She has also done one other thing…inspire me to become a better person physically, mentally and emotionally. 

I wasn’t blessed with the big guy gene, so I’ve been small and scrawny most of my life. After seeing Danyelle’s transform firsthand, something changed mentally for me as well. I started working out with a lot more intensity on a daily basis. I’ve been going to the gym 6 days a week for months now and have no plans to stop any time soon. I’m in the process of transforming myself and it’s an awesome feeling! I’ve put on 10 pounds of muscle in the past year with the goal of adding 10 more. It will take a lot of time and hard work but I know it can be done. Danyelle proved to me that you can accomplish whatever you set your mind to. My self-confidence has gone up tremendously and I’m genuinely happier than I have ever been. Danyelle was and still is my inspiration. I have to keep up with her! Without Texas Fit Chicks, none of this would have happened. Odds are, Danyelle and I would still be the same people we were a couple of years ago. The impact Texas Fit Chicks and Leigh Ann have had on our family is immense and cannot be understated. I have never taken a TFC class, but I strongly feel that without Texas Fit Chicks I would not be who I am today.

Food Swaps: It's A Lifestyle, Not A Diet

We women are always looking for a way to get rid of a few extra pounds. Unfortunately, many times we get trapped in the fad diet game and lose some weight, which we gain back very fast. Diets are problematic because they are hard to stick with in the long run. This means that sooner or later, once your diet is finished, you will start eating all the foods that you have been craving. And you never learn to eat in a better way.

The solution to this issue is not to change the way you eat for a few weeks, but to change your whole attitude towards food. By learning to make healthier food choices, those pounds will melt away without you even noticing. Let's have a look at some simple food swaps that you can start doing even today, in order to achieve a slim figure and a better health.

Nut milk instead of cow's milk

Be it almond, hazelnut or oat milk, those alternatives have much less calories than cow's milk and they are usually fortified with B12 vitamin and calcium. You can use them in any way you use regular milk: your cereal, hot chocolate, baking and cooking.

Stevia instead of sugar

Stevia is a plant-based sweetener that does not spike your blood sugar and prevents cravings. With regular sugar, you get a sugar rush and after a while you feel even more tired than before. Stevia is a great choice not only for losing weight, but for people with type two diabetes as well.

Brown rice instead of white rice

Brown rice, like all whole grain products, is rich in fiber. This means that it will improve your digestion, keeping you regular. It has also many more vitamins and minerals than white rice, which means that you get a lot more health benefits for less calories.

Turkey slices instead of deli meat

For the times that you crave a nice sandwich, go for turkey slices instead of deli meats. This way you will get much less calories, significantly less fat and sodium. Good for your figure, good for your heart and blood pressure as well!

Olive oil instead of butter

Olive oil is loaded with antioxidants and has a great taste. Butter has a great taste as well, but it is loaded in calories. Additionally, it is harder to digest than olive oil and does not protect your cardiovascular system the way olive oil does.

Yogurt instead of cooking cream

Yogurt has much less calories and fat than cooking cream and it gives a great slightly sour taste to pasta sauces and salad dressings. Add in a few chopped herbs and you will be amazed by its potential.

Kale chips instead of potato chips

Super easy, super healthy. Just put bite-sized kale pieces in the oven for 10', spray with olive oil, sprinkle with salt and you are done. Much less calories than potato chips and you will get tons of calcium and antioxidants as well.

Frozen bananas instead of ice cream

Ice cream is a hard one to substitute, but if you like bananas, just cut a couple of them in pieces, freeze overnight and blend. The most delicious, low calorie ice cream you have ever tasted! You can even add cocoa powder or peanut butter, for a twist.
