Fit Chick MIGHTY Muffins!





These little muffins are mighty and they will help you power through your day! They are packed with yummy goodness and are nutritious! Enjoy as a snack or part of your morning breakfast.

Mighty Muffins
  • 1 1/2 cups unbleached, whole wheat flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon sea salt
  • 1 1/4 cups unsweetened almond milk
  • 1 egg
  • 3 tablespoons almond oil
  • 1 tablespoon vanilla extract
  • 1 teaspoon nutmeg
  • 1 tablespoon cinnamon
  • zest from 1 orange or lemon
  • 2 tablespoons chia seeds
  • 1 cup blueberries
  1. Adjust oven rack to middle position. Preheat to 350.
  2. Sift together flour, baking powder, salt, nutmeg and cinnamon
  3. Whisk together milk, egg, almond oil
  4. Add wet ingredients to dry ingredients and stir until smooth
  5. Stir in zest, chia seeds and blueberries
  6. Fill each cup in a muffin tin 3/4 full
  7. Bake 20 minutes
  8. Yields 12 muffins
