Here's a little more about your trainer, Lindsey...
 

Lindsey has always had a love for sports, starting at age 4 with softball and later taking an interest in volleyball and basketball. Leading an athletic lifestyle, she never really struggled with her weight until after graduating from high school. She put on the "freshman 15" that so many do after starting college and from there out was on a roller coaster of losing and gaining weight. She would try every fad diet that came out, every "magic pill" that was placed on the shelves, and every new exercise craze that hit the market. After trying everything, nothing seemed to take the weight off and keep it off.

She finally got serious about working out and although the pounds came off, there was still something missing. It wasn't until she figured out how to incorporate healthy eating into her active lifestyle that she saw a noticeable, lasting change in her body. After figuring out what works in the way of eating healthy and exercising, she wanted to be able to share that with people who haven't been as fortunate to figure it out yet. It was then that she made the decision to obtain her certification as a personal trainer.

Obtaining her certification as a personal trainer through NASM was one of the best decisions she has ever made! She loves being able to help people reach their goals and motivating them to find their healthier selves! There is nothing more rewarding than knowing you made a difference in someone's life!

Here's a little more about your trainer, Wendy!


"I've always had a keen interest in learning and sharing about health, fitness, and nutrition. Let me tell you it's never NEVER too late to change your health.
My husband introduced me to running in college and even though I continued to run through the years, a few milestones--called "age" and "slower metabolism" and "babies"--began to show up in the form of an extra 20 pounds. In May 2011 I adjusted portion sizes and added more workouts and the weight came off after 4 months. The best part has been maintaining because eating well and exercising are truly part of my life! I really noticed results when I added boot camp workouts and can't wait to share this with other women. I understand what it's like to fit in time for yourself while being a wife, raising a family, and carving out a career. 

While continuing to work full time in communications and as a technical writer, I decided to become a certified personal trainer, but my plan really took off after finding Texas Fit Chicks. Thanks to trainer Tia, for her support and advice! I love that I get to workout with other women and help them reach their fitness goals. I'm telling you now that whatever your age, you can be in the best shape of your life! 

My husband and I just celebrated 20 years of marriage and we have two awesome kids, ages 14 and 12. I have a Bachelor's in Advertising from The University of Texas. I'm now also a W.I.T.S. certified personal trainer and AFAA certified group exercise instructor. I taught Pilates for 3 years (while living in Colorado) and have completed 2 marathons and 2 sprint triathlons. Currently I'm working on a challenge to complete half-marathons #7, 8, and 9 in consecutive months."

"I started with the TFC in August of 2011 after having a reality check from my doctor. I was 32 and my blood pressure was out of control. He told me I had three months to try and get it under control or he was going to medicate me. That was it. So I heard about Texas Fit Chicks from a friend of mine and decided to try it. After the first 5 weeks, I only lost 3lbs! I know I worked harder than that. Then I did my first challenge where they gave me a diet plan. I lost 14lbs in 30 days coming in 2nd place! When I had my three month check up with my doctor, he was shocked by my fitness level. The best part was my blood pressure was perfect! That's when I realized that my overall diet was the reason I was not seeing results. Once I connected the two components, diet and exercise, I was able to maintain the weight loss for the most part for a year and was smaller than I had ever been in my life. 

I was content with my size and shape before I started this last challenge and to be honest, I didn't think I could be any smaller than I was as I have always been "thick". My trainer talked me into doing it again and let me tell you, I was amazed at how fast my body was reacting to the clean eating. For my exercise, I did my usual bootcamp 3 days a week and then ran 3-4 miles on my non-workout days setting aside one rest day per week. The more I stuck with the plan, the more I wanted to do because of how good I felt!

Healthy Recipes for Thanksgiving Day

Turkey, Sweet Potato, and Cranberry Stew

Conjure up the holidays! Cranberries and ginger give this turkey stew a sweet-and-sour tang; $2.21 per serving.
Work Time: 25 Minutes
Total Time: 6 Hours 10 Minutes
Servings: 4
Ingredients:
3 lb turkey drumsticks, skin removed
1 sm onion, diced
1 Tbsp honey
1 Tbsp cider vinegar
1 1/2 tsp finely chopped fresh ginger
1 tsp salt
1/2 tsp black pepper
1 c chicken stock (we used Kitchen Basics)
1 lb sweet potatoes, peeled and cut in 1" chunks
1/2 c dried cranberries
2 Tbsp flour
Directions:
1. Combine turkey, onion, honey, vinegar, ginger, salt, pepper, and stock in large slow cooker. Cover and cook on low 5 hours. Add potatoes and cranberries. Cook until potatoes are tender, 45 minutes more.
2. Remove turkey and pull meat from bones. Pour one-quarter of the liquid into small pot and whisk in flour until smooth. Slowly whisk in remaining liquid. 3. Toss meat, potatoes, and cranberries with gravy and reheat if necessary.

Pass the Green Beans with Shallots
No need to sabotage a perfectly good vegetable by drowning it in a pool of cream of mushroom soup and deep-fried onions. This lean bean dish delivers just as much flavor and crunch, and it sidesteps two-thirds of the belly-bloating sodium you'll find in a casserole.

1/4 cup olive oil
4 large shallots, peeled and quartered
2 Tbsp reduced-sodium chicken broth
2 lbs green beans, trimmed

1/ Bring a large pot of water to a boil.

2/ While water is heating, pour olive oil into a large saute pan over medium heat. Add shallots. Reduce heat to medium-low and saute until shallots are soft, about 10 minutes. Add chicken broth, 3/4 teaspoon salt, and 1/4 teaspoon pepper; stir well. Remove from heat.

3/ Add green beans to boiling water and cook for 5 minutes. Drain. Toss beans with shallot mixture. Serve immediately.

Pass the Brown Rice Pilaf with Apricots and Almonds
Make your stuffing with wholegrain pilaf instead of bread and you'll trim 61 calories and seven grams of fat. Not only will these slow-to-digest grains help keep you full, but they've also been shown to blast ab fat.

1 3/4 cups reduced-sodium chicken broth
1 3/4 cups medium-grain brown rice
1 Tbsp olive oil
1 cup finely chopped Vidalia onion
1/4 cup chopped dried apricots
2 tsp lemon zest
2 Tbsp chopped fresh parsley
1/4 cup slivered almonds

1/ Combine chicken broth, 1 3/4 cups water, and 3/4 teaspoon salt in saucepan. Bring to a boil. Add rice. Reduce the heat to low, cover, and cook for 40 minutes.

2/ Ten minutes before rice is finished, heat olive oil in a saute pan over medium-low heat. Add onion and saute until just soft, about 5 minutes. Add apricots, lemon zest, 2 tablespoons water, and 1/4 teaspoon ground black pepper. Stir well and remove from heat.

3/ Once rice is cooked, remove from heat. Let stand covered 5 minutes. Uncover and toss with onion mixture, parsley, and almonds. Serve.

Not only is this dish practically fat-free, but the chili powder contains capsaicin, which studies have shown may inhibit fat-cell growth and help people consume fewer calories. And cinnamon is no slacker spice either: It keeps your blood sugar stable and your appetite in check, so you won't be tempted to go back for a second helping.

4 large sweet potatoes (3 1/2 lbs total)
1/2 cup fresh orange juice
2 tsp orange zest
2 Tbsp brown sugar
2 tsp ground cinnamon
1 tsp chili powder

1/ Bake the sweet potatoes in a 425°F oven until they are soft, about 70 minutes. Remove sweet potatoes from oven and allow them to cool slightly.

2/ In a small bowl, whisk together orange juice, orange zest, brown sugar, 1/4 teaspoon salt, cinnamon, and chili powder.

3/ Scoop out the insides of sweet potatoes and place in a large mixing bowl. Pour orange juice mixture over sweet potatoes, mash well, and serve.

Stuffing with Celery and Thyme
Do you love traditional turkey stuffing enough to take the colossal calorie splurge most stuffing recipes require once a year? With a little revision we’ve made this once-a-year favorite a low-calorie food that you can eat year-round.
4 cups cubed reduced-sodium whole-wheat bread
1 teaspoon olive oil
4 stalks celery, minced
1 cup chopped onions
2 teaspoons poultry seasoning
1/2 teaspoon dried thyme
1/4 teaspoon ground black pepper
1 1/2 cups frozen defatted chicken stock, thawed
1. Preheat the oven to 350°F. Coat a 12" x 8" baking dish with no-stick spray.
2. Coat a large baking sheet with no-stick spray. Place the bread on the baking sheet and mist with no-stick spray. Bake for 15 minutes, or until golden brown. Transfer to a large bowl.
3. Coat a 10" no-stick skillet with no-stick spray and place over medium-high heat until hot. Add the oil, celery, onions, poultry seasoning, thyme, and pepper. Cook, stirring, for 5 minutes, or until the onions are soft but not browned.
4. Add the stock to the bread cubes in the bowl. Toss to mix. Add the onion mixture and mix well. Transfer to the prepared baking dish. Bake for 30 minutes, or until golden brown.
NOTE: To freeze, cool the cooked casserole. Wrap the baking dish in freezer-quality plastic wrap, then in freezer-quality foil. To use, thaw overnight in the refrigerator. Remove the foil and plastic wrap; discard the plastic wrap. Cover with the foil and bake at 350°F for 15 to 20 minutes, or until hot.
Makes 8 servings. Per serving: 93.9 calories, 1.9 g fat, .3 g sat fat, 14.9 g carbs, 4.1 g sugar, 3.7 g fiber, 4.5 g protein

Here is some more information on your trainer, Tabitha



Tabitha's passion for fitness started as a teenager. She did aerobics and step classes with her mom and really enjoyed the "group exercise" environment!

After having her first child in 2000, she joined her first boot camp and fell in love with it. She continued to attend boot camps off and on for 10 years and used them as her way to get back in shape after each pregnancy(3) along with going to the gym. She always thought to herself  "I'd like to do something like this myself one day". 

After her last baby, she attended classes regularly at the gym and decided to pursue becoming a group fitness instructor. She did just that and has now been teaching Les Mills BODYPUMP at 24 Hour Fitness & Northlakes Recreation Center since May 2012. She is also trained & working on her certification to teach BODYCOMBAT as well as studying to become an NASM Certified Personal Trainer.

7 Day Challenge...are you In??



The obesity rate in America is sky high. After a recent visit to the hospital, I could not believe how things have changed. The chairs are huge. Basically a small bench. The wheel chairs are wide enough for two. There has had to be an adaptation in medical facilities to accommodate our growing waistlines. Things have got to change.

It seems like eating is now an event in our country, rather than a way to nourish our bodies. Not only are there restaurants on every corner, but nine times out of ten the portion sizes for one meal are unbelievably large. It is very difficult to eat well when eating out. If weight loss is your goal, limit your restaurant outings to one a week if possible...even if something looks or sounds healthy, it is probably loaded with calories and fat that will derail your efforts.

I am sure everyone reading this drives a car. The complexity of what goes on under the hood and makes the car run efficiently is beyond me. I have no idea how it all works (nor do I care to :) I just want it to turn on when I start it!). But let me ask you this: Would you put sugar or some other substance in the tank and expect it to run? Would you put in 1/2 gas and fill the rest with water? Of course not. If you did, you would probably ruin the engine and the car wouldn't run correctly.

How much more complex are our bodies, yet we treat them as if they can handle the junk we put in them, and then expect them to work properly. It just doesn't happen. If you wouldn't think of destroying your engine in a vehicle, why do we trash our bodies through poor nutrition, without thinking twice? Your body don't have a fighting chance to run properly without taking care of it by giving it what it needs.

So - here's the challenge. For the next 7 days, I want you to change the way you think about food. I want you to look at it as nothing more than FUEL that will allow your system to function the way it's intended to. Don't let it be about taste. Although if you stick to good nutrition for a while, the junk will begin to taste bad and you will crave the good stuff. I promise! But for the next 7 days, it's fuel. Let yourself eat every 3 hrs. Incorporate fresh fruits, fresh veggies, boneless skinless chicken breast, ground lean turkey as a substitute for meat, raw and unsalted almonds, hard boiled egg whites, etc. Stay away from sugar, processed foods, go for whole grain, etc. I have many recipe and snack ideas - just leave a comment to get some more suggestions

If you currently have a diet that's high in sugar, processed foods, high carbohydrate (not complex carbs but the highly processed ones) and fatty foods, expect for day 3 to be tough. You can get through this. Day 1 you will be pumped and ready for it. Day 2 might be a little more difficult but Day 3 is going to take determination most likely. Push through it. Drink LOTS of water throughout each day. You will start to feel better and have more energy around day 5-6. If you need to plan to eat a hamburger on day 8 do it, but you may not like the way it feels afterwards.

Don't look at this as deprivation or something to dread. Imagine having more energy through the day and doing away with the dips in blood sugar that give you that crashing feeling. Imagine sleeping better and feeling lighter, and maybe losing a couple of pounds in the process!

It's just one week out of 52. You can do it!
